Trifle de menta y chocolate

Ingredientes
25gr de Mantequilla
250ml de Leche
1 trozo de corteza de limón
1/2 palito de canela
2 yemas
60gr de azúcar
25gr de maizena
200gr de chocolate sin leche

Preparación
Poner todos los ingredientes en un cazo y calentar a fuego medio moviendo continuamente hasta que espese, entonces se retira y se continua batiendo.Dejar enfriar.
Ingredientes de mousse
1 taza licor de Menta
2 claras de Huevo
200gr Azúcar
1/2L Nata
50gr Agua
6gr Gelatina
Preparación:
En una cazuela mediana añadir el agua y el azúcar y calentar a fuego medio. Llevar a ebullición y hervir durante 5 minutos. Disolver la gelatina y añadir el licor.Verter lentamente en la nata montada y a continuación añadir las claras montadas a punto de nieve.
Montar la copa alternando una capa de crema de chocolate y otra capa de mousse de menta
Mint and chocolate trifle

Ingredients
25gr Butter
250ml Milk
1 Lemon peel
1/2 stick of Cinnamon
2 Egg yolks
60gr Sugar
25gr Cornstarch

200gr Chocolat without milk
Preparation
Place all ingredients in a saucepan and heat over medium heat beating constantly until thickened, then remove and continue beating. Allow to cool.
Ingredients for mousse
1 cup Mint licor
2 white Eggs
200gr Sugar
50gr Water
1/2L Heavy Cream
6gr Gelatine
Preparation
In a medium sauce pan combine water and granulated sugar on medium heat. Bring to a boil and boil for 5 minutes. Dissolve gelatine and add licor. Slowly pour in your heavy cream and then add white eggs until stiff.

Assemble the glass alternating a layer of cream and another layer of chocolate mint mousse.

Torrijas

Torrijas (english)


Today is papal conclave, Pope election set to begin. And today is the day when a client asked us for the recipe of torrijas. Today is a perfect day to share this recipe.
Torrijas are the spanish version of the french toast and are usually only available around Lent and Easter time. In the hotel, serve torrijas as breakfast in those days. Traditional recipe usually make with day-old left-over bread. In some parts of Spain, torrijas is prepared dipped in wine or honey, but in Hotel Dehesilla, we dip it in milk making it extra soft inside and crunchy outside. Torrijas are the perfect solution for stale bread!

Ingredients
Bread: sandwich, baguette or your favorite bread
2 eggs
2 cups of whole milk
1 / 2 cup of white sugar
1 Lemon peel
Cinnamon stick and powdered
Sunflower Oil 
 
Preparation
Slowly boil the milk with 2 tbspoon of sugar, cinnamon stick & lemon peel. Let get cold.
Slice the bread in thick slices. If you use sandwich bread, cut into small parts.
Dip the bread slices in the cold milk. Get them to absorb as much as possible without breaking apart!
Heat some oil in a pan on medium high.
Beat the egg in a bowl.Dip bread slices into the beaten egg.
Fry each bread slices until each side is golden brown. Rest the torrijas on paper towel.
Mix rest of sugar and cinnamon powder in a bowl. Coat each torrijas piece with sugar and tap off excess sugar.
Serve hot or cold.

Torrijas (español)

Hoy es el cónclave papal, la elección del Papa a punto de empezar. Y hoy es el día en que un cliente nos ha pedido la receta de las torrijas. Hoy es un día perfecto para compartir esta receta.
Las torrijas son la versión en español de las tostadas francesas y por lo general sólo están disponibles durante los tiempos de Cuaresma y Pascua. En el hotel, se sirven torricas como desayuno en esos días. La receta tradicional se suele hacer con los restos del pan del día anterior. En algunas partes de España, las torrijas se prepara mojadas en vino o miel, pero en el Hotel Dehesilla, se mojan en leche por lo que el interior queda extra suave y crujiente el exterior. 
 
Ingredientes

Pan: pan de molde, baguette o su pan favorito
2 Huevos
2 tazas de Leche entera
1 / 2 taza de Azúcar
piel de Limón
Canela en rama y en polvo
Aceite de girasol

Preparacion
Lentamente hervir la leche con dos cucharadas de azúcar, la piel del limón y la canela en rama. Dejar enfriar.
Cortar el pan en rebanadas gruesas. Si se usa pan de molde, cortar en rebanadas más pequeñas.
Mojar las rebanadas en la leche fría. Intentar que absorban el máximo posible sin romperse.
Calentar el aceite en una sarten a fuego medio- alto.
Batir los huevos en un bol. Mojar las rebanadas en los huevos batidos.
Freir cada rebanada hasta que estén doradas. Escurrir las torrijas en papel de cocina.
Mezclar el resto del azúcar y la canela en polvo. Cubrir cada torrija con el azúcar y quitar el exceso.
Servir caliente o frío.

Sacher torte

Sacher torte



Ingredientes
180 gr Mantequilla
5 Huevos
150 gr Almendras en polvo
300 gr Harina
400 gr Azúcar
1 cucharadita de Levadura
150 gr Chocolate negro
100 ml Leche
150 gr Chocolate negro
150 ml Nata
250 gr Mermelada de albaricoque
2 cucharadas de Agua

Ingredients
180 gr Butter
5 Eggs
150 gr Almond powder
300 gr Flour
400 gr Sugar
1 tablespoon(s) Baking powder
150 gr dark Chocolate
125 ml Milk
150 gr dark Chocolate
150 ml Cream Milk 
250 gram(s) Apricot jam 
2 tablespoons Water 


Preparación

Con una batidora eléctrica, mezclar la mantequilla (a temperatura ambiente) y el azúcar hasta que esté cremoso. Añadir una por una las yemas de huevo, mientras se está mezclando. Calentar la leche con el chocolate hasta que se derrita y añadir a la mezcla.
Mezclar la levaura, harina y almendra en un bol. Añadir esta mezcla seca lentamente con el mezclador a la mezcla húmeda. Batir las claras hasta punto de nieve y añadir.
Vierta la mezcla en un molde, hornear a 180 grados en el horno precalentado, alrededor de 50-60 minutos.
Calentar la mermelada de albaricoque con 2 cucharadas de agua. Poner la tarta del revés y cortar por la mitad horizontalmente y extender la mermelada caliente sobre la mitad de la tarta. Montar el pastel de nuevo, ahora cubrir la parte superior y los lados.
En baño María derretir el chocolate y la nata. Cubrir el pastel con este glaseado de chocolate.

Preparation
With an electric mixer, mix together butter (room temperature) and sugar till creamy. Add one by one egg yolks while still mixing. Heat milk with the chocolate until melted and add to the mixture.
Mix baking powder, flour and almond in a bowl Add this dry mixture slowly with mixer at the wet mixture. Beat egg whites till soft peak and add.
Pour the batter in a pan, bake at 180 degrees in the preheated oven around 50-60 minutes
Heat the apricot jam with 2 tablespoons of water Turn the cake upside-down and cut in half horizontally and spread the hot jam on a cool cake. Put the cake back together, now cover the top and the sides with the jam.
In a double boiler melt the 150g chocolate+150ml cream milk. Cover the cake with the chocolate glaze.

Truco de la receta
En lugar de agua, añadir licor de almendra a la mermelada.
