Con
motivo de las fiestas del patrón del municipio donde se encuentra el
hotel se ha preparado esta tarta, que resulta más fácil de hacer de
lo que parece y tiene un gran resultado.

el bizcocho:

Azúcar blanca

Preparación
Separar
las claras de las yemas. Con una batidora
eléctrica, mezclar las yemas y el azúcar hasta que esté cremoso.
Batir las claras hasta punto de nieve y añadir al preparado anterior
mezclando suavemente. Tamizar la levaura y la harina. Añadir esta
mezcla seca lentamente, para que no se baje.
Vierta
la mezcla en un molde enharinado, hornear a 180 grados en
el horno precalentado, alrededor de 20 minutos. Dejar enfriar
en una rejilla.
Para
el almibar:

Azúcar blanca

Preparación
Poner
en un cazo todos los ingredientes y dejar hervir unos 10 minutos.
Después enfriar.
Para
la trufa:
500ml
Nata
150gr
Chocolate negro
Preparación
Poner
en un cazo la nata y cuando esté caliente añadir el chocolate.
Cuando se haya disuelto completamente retirar del fuego, dejar
enfriar y guardar en la nevera al menos 10 horas.
Transcurrido
ese tiempo, montar la trufa con unas varillas eléctricas. Reservar
en la nevera.
Para
la nata:
500ml

Azúcar blanca

Gelatina
Preparación
Montar
la nata con unas varillas eléctricas, primero a velocidad baja y se
va aumentando; cuando esté a medio montar, añadir el azúcar y la
gelatina. Reservar en la nevera.
Para
la yema:

Preparación
Poner
en un cazo el agua y el azúcar, hervir durante 5 minutos. Batir las
yemas añadiendo poco a poco el líquido caliente. Si se desea
espesar más la mezcla se puede calentar al fuego hasta que tenga el
espesor deseado. Dejar enfriar.
Montaje
de la tarta
Dividir
el bizcocho en tres partes. Colocar una de esas bases en la bandeja
de presentación. Pincelar con un poco de almibar. Cubrir con la
trufa, guardando una parte para decorar. Colocar otra base de
bizcocho sobre la trufa y pincelar con almibar. Cubrir con la mitad
de la nata montada. Guardar la tarta en la nevera mientras se prepara
la última parte.
Extender
la yema sobre la última base de bizcocho. Espolvorear con un poco de
azúcar y con la ayuda de un soplete de cocina quemar el azúcar.
Dejar enfriar. Cuando esté frío, colocar sobre la capa de nata con
cuidado. Con el resto de la nata montada y de trufa, decorar la
tarta.

Preparación
Separeted
egg whites and yolks. With an electric mixer,
mix yolks and sugar until creamy. Beat egg whites till soft peak and
add to mixture with soft moves. Sift baking powder and flour. Add
dry mixture slowly, without lowering.
Pour
batter in a floured pan at 180 degrees in a preheated oven around 20
minutes. Let get cold on a rack.
For
syrup:

Preparación
Put
all ingredients in a pan and boil about 10 minutes. Then let get
cold.
For
truffle:
500ml
Cream Milk

Dark Chocolate
Preparation
Put
cream milk in a pan and when get hot melt chocolate. Get out heat
when dissolved completly, let get cold and put in a fridge at less 10
hours. After
that time, whipping truffle with electric mixer. Reserve in fridge.
For
whipped cream:

Preparation

electric mixer whip cream, first low until fast. When half whipped,
add sugar and gelatine. Reserve in fridge.
For
cream yolk:

Preparation
Put
in a pan water and sugar, boil about 5 minutes. Beat yolks adding
slowly warm water. If want thicker
mixture can be heated until
desired thickness. Let get cold.
Assembling
cake
Divide
cake in three parts. Put one of those parts in plate presentation.
Brush with some syrup. Cover with truffle, let a part for
decoration. Put another base of cake over truffle and brush with
syrup. Cover with middle whipped cream. Save cake in fridge while
preparing last part.
Extend
yolk cream over last part of cake. Sprinkle with a little bit of
sugar and helping with kitchen torch burn sugar. Let get cold. When
get cold, put over whipped cream with care. Decorate cake with rest
of whipped cream and truffle.
